Chicken Enchiladas!

Yes ladies and gentlemen, I give you the delicious (though not technically nutrious) CHICKEN ENCHILADAS! Sure to please your husbands and friends.







INGREDIANTS
1 cup chicken broth
1 cup sour cream
1 can cream of chicken
1 package of enchilada mix
2-3 breasts of cooked chicken, shredded (Thanks to Elise for the shredding!)
Package or tortillas
Shredded cheese (however much you want!)

DIRECTIONS
(1) Mix the first 4 ingrediants together in a large bowl. Divide the sauce in half. Add the chicken to one of the bowls; save the remaining half for later.
(2) Heat up the tortillas in the microwave just so they are warm enough to wrap up (10 seconds) Add the sauce mixture with the chicken to the tortillas and put the enchiladas in a 13x9 pan. (NOTE: I like to put spanish rice in the enchiladas too! We just use a package mix of spanish rice. It gives it a little umpf!)
(3) Once all the enchiladas are in the pan, spread the second half of the sauce over the enchiladas. Cover the pan with aluminum foil, and place in the oven at 350 degrees for 20 minutes.
(4) After 20 minutes are up, take off the aluminum foil and add the cheese on top. Cook for 5 more minutes.

  1. Alisa! Oh my goodness! I am so excited that you posted your too-good-to-be-true chicken enchilada recipe! Shauni and I were just talking the other day about how badly we wanted you to start bloggin cuz your recipes are the BEST! I can testify (it is the Sabbath) to the "deliciousness" of this recipe. I've make it for my hubby several times and it always hits the spot! I tried to make your yummy Alfredo pizza once too...disaster! You should try to convince Carl to blog about it the next time you whip it up! P.S. LOVED the picture :)
